This easy cucumber and tomato onion salad is a delicious and refreshing side dish that’s perfect for quick meals and perfect for summer.
This salad has been on our table since I was little. My mom loves a quick and easy salad to accompany dinner, and my family continues that tradition. My kids love all forms of salad. No meal is complete without some vegetables tossed in a simple vinaigrette.
- cucumber. I used British cucumbers this time, but Persian cucumbers can also be used.
- tomato. Use ripe, juicy tomatoes that are in season.Cherry tomatoes, grape tomatoes, beefsteak tomatoes, heirloom tomatoes, etc.
- red onion.
- Olive oil.
- lemon juice / Vinegar.
- oregano. I used dried oregano, but you can also use fresh herbs such as basil, chives, or fresh dill.

This recipe is so easy, use the best ingredients available. Fresh seasonal vegetables are essential. Peel the cucumber, slice it into coins, and add to a large bowl. Cut the tomatoes into wedges (or cut smaller tomatoes in half) and thinly slice the red onion and add to the bowl. Please enjoy with your favorite dressing.
How to make easy salad dressing
Pour equal amounts of olive oil and vinegar or lemon juice into a jar, add salt, pepper and dried oregano, or mix all ingredients in a small bowl. You can also add minced garlic. Seal the jar and shake until the dressing emulsifies, then pour over the salad.
Can I make this first?
Cucumber salad tends to be watery if you make too much ahead of time. It’s a good idea to prepare ingredients up to 3 hours in advance and keep them covered and refrigerated until ready to eat. Drizzle dressing just before eating.

- 1 big cucumber
- Four tomato
- 1 small red onion
- 1-2 tablespoon Olive oil
- 2 tablespoon lemon juice
- 1 teaspoon dried oregano
- salt and pepper taste
Peel the cucumber, cut into coins and add to the bowl. Slice the tomatoes and red onions and add to the cucumbers.
Mix all the dressing ingredients and pour over the salad.
