Garnished with green olives, feta cheese and cucumber, this easy grain salad is a delicious lunch recipe and a great side dish to your favorite protein.

Cook grain according to package directions. I cooked the bulgur wheat in chicken stock for extra flavor, but feel free to use water or vegetable stock/broth. Once cooked, allow the grains to cool to room temperature before adding them to a large mixing bowl. Add chopped cucumber, feta cheese, halved olives and fresh herbs. Mix the dressing ingredients in a small bowl and pour over the salad. Toss and combine before serving.
