The Vegan Nigerian: Easy Vegan Cornbread Recipe

I first made this cornbread recipe when I visited Texas in 2022. Perfectly moist, with a hint of sweetness and a satisfyingly gritty texture, it’s surprisingly easy to make.
Honestly, they’re pretty good on their own, served hot with a dollop of vegan butter, and can even be served with your favorite stew or soup. Perfect to share with others, it makes a valuable contribution to the spread of any food product.

1 cup cornmeal or corn grits
1 cup plain flour (plus 2 tablespoons)
1 teaspoon baking soda
1 teaspoon salt
2/3 cup granulated sugar
1 and 1/4 cups vegan milk
1/3 cup sunflower oil
Method
Preheat oven to 200 degrees Celsius.
Place all ingredients in a mixing bowl and mix with a wooden spoon until lump-free.
Bake in center of oven for 20 to 25 minutes or until center is clean with a toothpick.
