Making your own pastries can be intimidating, but it doesn’t have to be. Believe me, it’s easy with a food processor. If you don’t, you only have a few more minutes to sacrifice.
What’s not to love about Jamaican meat patties? They’re a true MVP of all pies because they’re always ready to eat. Besides, it’s impossible to say no to these goodies, especially with their flaky, buttery crust and delicious meat filling. Hmmm!

The beef filling is perfectly spiced. If you can stand the heat, by all means add it to your filling. I added 1/2 teaspoon of red pepper to make it spicy, but not too spicy.
You can also replace the shortening in the crust and use only butter for a more flavorful dough.

pie crust
- flour – All-purpose flour is an important component of the crust.
- perfume – Salt, sugar and turmeric (which tastes almost like ginger) add flavor and give the patty a bright yellow color.
- obesity – Ultra-low temperature shortening and butter (frozen is even better) creates a melt-in-your-mouth texture.
- liquid – Ice-cold water and vinegar keep the dough soft for an airy texture, moist crumbs, and incredible flavor.

- Ground beef – The star of the meat pie filling. However, you can use ground pork or chicken for your switch out.
- seasoning – Curry, onions, garlic, paprika, allspice, dried thyme, white pepper, chili powder, parsley and green onions enhance the meat. For that lovely heat, Scotch Bonnet Pepper is an option.
- chicken bouillon powder – For extra meaty essence and rich umami.
- bread crumbs – This ingredient acts as a binder and keeps the meat from clumping together.
How to make Jamaican beef patties


make a crust
- mix – Combine flour, salt, sugar and turmeric in a food processor or by hand and mix well. Add the butter, shortening, vinegar and water little by little and mix until the dough comes together. (Photos 1-4)
- roll – Place the dough on a floured surface. Divide evenly into 2 equal halves and roll into balls. (Photos 5-6)
- shape – Using a wide-mouthed glass or bowl about 4 to 5 inches, lightly press and release dough to form meat patty dough. Continue cutting circles until they are all cut. (Photos 7-8)
- Chill – Refrigerate for at least 30 minutes or until ready to use.

make the filling
- Sauté – Put 2 tablespoons of oil in a pan, then add onion, garlic, paprika, thyme curry, chili powder, white pepper, allspice and chicken broth. Sauté for about 2 minutes.(Photos 9-11)
- Add meat and bread crumbs Continue cooking for 10 more minutes, stirring frequently to prevent burning. Then add about ½ cup water. (Photo 12)
- Flavor adjustment – Finally add green onions and parsley and season with salt and pepper. (Photos 13-14)

- fill – Scoop a heaping tablespoon of filling into each circle and brush egg white around half of the circle. Gently twist with your fingers to close the edges of the meat pie. (An alternative method is to press the tip of a fork along the edge of the dough to seal.) (Photos 15-16)

If you have leftover meat patties (highly doubtful), refrigerate for them 3 days into an airtight container. You can also wrap it in vinyl foil or aluminum foil. freezing to 2 months.
Reheat meat patties in 177°C oven, air fryer, or toaster oven for about 10 minutes or until fully cooked. You can use the microwave, but the dough will not be crispy.
