- ice water – Continue pulsing until the crumbs in the dough are the size of a pea. Then add ice water. Pulse 4 to 5 times until dough barely comes together.

- finishing fabric – Press the dough into a smooth, flat disc. Divide the dough in half (one half is slightly larger). Chill for 30-45 minutes.
