FAQ
Generally, almost any dish that is assembled in a deep, wide baking dish (usually a glass, ceramic, or enamelled cast iron casserole dish), baked in an oven, and served in the same dish is a casserole. This is a great one-pot meal that can usually be made ahead. Usually sauce or cheese (or both) are used to bind vegetables, meat, pasta or rice.
Firm but not dry, moist but not juicy. An ideal balance of meats, vegetables, starches, liquids and thickeners. Although some casseroles are just vegetables. And of course, cheese always makes everything taste great!
material: Though heavy, cast iron retains heat and cooks casseroles evenly. Ceramic is my second choice, but Pyrex makes an excellent glass casserole dish. It all depends on your budget. It’s not covered all the time, but it’s handy to have a lid just in case.
size: How many people are you cooking for? More people means bigger dishes that fit all the ingredients. Few — small ones. At least 2 inches deep is best, but 3-4 inches is better because you need room for your masterpiece to bubble without overrunning and ruining your oven.
