A velvety creamy sauce infused with lemon and herbs envelops cheese mashed potatoes in this sumptuous fish pie with mixed seafood. It’s the perfect recipe for a special occasion or when you want to make an impression.

To make this sumptuous fish pie, use a combination of at least two types of fish, and change this according to what is seasonally and sustainably available. Add some crustacean to make it richer, but the fish alone is just as nice. If you omit the shrimp, add salmon/trout.

I like the combination of smoked fish and white fish, and if I want to go extra fancy, I like salmon or salmon trout (which are more affordable, sustainable, and readily available).

vintage condition

2022 was a much cooler and slower vintage than average. The slow ripening conditions make this an exceptional vintage for our vineyards, with concentrated fruit development and mouthfeel weight. All grapes are organically grown and home grown.


The grapes were hand-picked early in the morning and pressed whole bunches without adding juice. His 30% of the wine is fermented in new oak barrels and the remaining 70% in concrete eggs. The wine undergoes natural fermentation and remains on the lees for 8 months after fermentation. No sulfur added. In order to express the freshness and purity of Chardonnay fruit, we reduced the use of oak in this vintage. The wine is filtered before bottling.

tasting notes

Beautiful pale straw color with a slight green tint. A complex nose with nuances of fresh hay, citrus, pineapple, white nectarine, butterscotch and caramelized toffee. A juicy and fresh palette full of fruit with a long lime acidity. A fresh, light, charming and very enjoyable wine. A great wine to enjoy on its own, but it also complements many summer lunchtime dishes such as salads, gourmet his sandwiches, sushi, quiche and grilled calamari.

How to make a gorgeous fish pie with cheese mash

  • Start by boiling the potatoes in a large pot of boiling salted water until the potatoes are tender. Drain to allow more steam to evaporate and dry excess moisture from the potatoes a little more.
  • Prepare the seafood by cleaning and cutting it into appropriate sizes. There is no need to cut the shrimp unless they are very large.
  • Poach smoked fish in warm milk with bay leaf and fish broth. Add this to the remaining fish in the pie plate.
  • Make a creamy sauce by softening the onion and celery in butter until translucent. Next, add flour to make the roux. Add hot milk slowly until fully absorbed.
  • Add lemon zest, juice, cream (or double cream), vermouth (or wine), and fresh herbs. When mixed, add cheese and season with salt and white pepper.

  2. Make a parsley crumb or other herb and bread crumb mixture to lighten the fish pie topping.
  3. A potato rosti topped with grated potatoes can be a delicious and crispy topping.
  4. Puff pastry is another non-traditional topping idea that works very well.

Fish pie filling:

500gms smoked haddock, cut into bite size pieces

200gms salmon fillet or trout, skin and bones removed, cut into bite-sized pieces

200gms shrimp, cleaned, deveined, head and tail removed (optional)

300milliliter milk

1 Sachet of concentrated fish sauce (fish stock) (optional)

2 bay leaves

40gms butter

1 onion or 2 shallot, finely diced

1 thin celery stalks, finely diced

40gsm flour

Peel and juice of half a lemon (2 tablespoons lemon juice)

2 Tbs dry vermouth or white wine (optional)

250ml (1 cup) cream (divided)

1 1/2 Finely chopped parsley (flat leaves) Tbs

1 Tbs finely chopped fresh dill

2 teaspoons dijon mustard

45gms / ½ cup grated Aged Cheddar/Gruyère/Dalewood Fromage Huguenot

15gms parmesan cheese, finely grated

Mashed potato toppings:

900gms flour potatoes, peeled and cut into large chunks of uniform size

¼ cup 250ml of cream used in the filling recipe

20gms butter plus more to brushing top

20gms / ¼ cup grated aged cheddar/Gruyère/Dalewood Fromage Huguenot

15gms grated parmesan cheese

salt and white pepper

1 teaspoon dijon mustard

Preheat oven to 200C/400F.

Boil the potatoes in a large pot of salted water until they are knife-soft. Drain and set aside to dry properly.

While the potatoes are cooking, simmer the milk, bay leaves, and stock and add the haddock pieces. Heat over low heat for about 1 minute, then turn off the heat.

Scoop the partially cooked haddock with a slotted spoon and place it in the pie plate along with the other seafood. Remove the bay leaves from the milk to reserve.

Heat a nonstick skillet to medium to large, add the butter, and when it boils, add the chopped onion and chopped celery. Sauté over low heat for 5 minutes until translucent.

Add the cake flour to make a paste, and gradually add the reserved milk to make a white sauce (bechamel).

Add lemon zest, juice and dry vermouth and mix. For topping the mashed potatoes he sets aside 60ml/1/4 cup and adds 190ml of cream.

Add the two types of grated cheese to the sauce along with the mustard, chopped herbs, salt and pepper. Adjust the seasonings to your liking and make sure the flour is thoroughly cooked.

Pour the creamy fish pie sauce into the fish mixture and mix lightly to coat.

Drain and dry the potatoes, put them back in the pot they were cooked in, and run through a potato ricer, if you have one, or mash them with a potato masher. Add all other ingredients and mix.

Drop the mashed potatoes over the fish pie filling and gently spread it over the surface. Brush top of pie with additional melted butter. If you want something fancy, put the mashed potatoes in a pastry bag and squeeze them into a nice swirl.

Bake on a baking sheet for 30 to 35 minutes, until golden brown and bubbly. Let the pie rest for 5 minutes before serving.


Place a baking sheet under the fish pie while baking as the sauce may bubble and leak.
