I originally published this recipe as part of the Italian menu, but it required a dedicated post. For my main course I made tagliatelle with roasted butternuts and mascarpone sauce.Or dessert, made limoncello cream with nut crumble.

- melon I used span spec/cantaloupe, but honeydew melon is also delicious.

How to make melon and parma ham salad
Cut the melon in half and scoop out a few balls with a melon baller. Cutting a wedge to make a ball is also cute.
Cut the remaining melon into thin wedges and remove the tough outer skin.
Slice the mozzarella cheese thinly and then cut in half.
Prepare all the elements and put them in the refrigerator.
Can I make the melon and Parma ham salad in advance?
Melons (wedges or balls) can be cut and stored in an airtight container in the refrigerator until ready to serve.
Cut the mozzarella cheese and make the dressing ahead of time, but watercress and arugula/arugula wilt quickly, so assemble the salad just before serving.

A perfect Italian summer salad recipe with melon, mozzarella, parma ham and honey mustard vinaigrette.

1 small winter melon or span speck (melon or honeydew, cut in half)
2 Fresh Mozzarella Balls 125gm x
1 Rocket Leaf Packets – Approx. 3 handful
1 Watercress sachet – approx. 2 handful
120gms parma ham or other italian prosciutto
60milliliter olive oil
2 tablespoons red wine vinegar
1 heaping teaspoon of mustard
salt and pepper
Make the dressing by mixing all ingredients until emulsified. Shake in a jar or use a small whisk.
Cut the skinless melon half into wedges. Scoop the second melon into a ball and set aside.
Slice the mozzarella cheese.
When ready to serve, assemble the salad by scattering arugula and watercress on the bottom of a large serving dish. Place melon slices and balls all over the surface. Arrange the mozzarella cheese between the melons. Place sliced ham in between.
Pour dressing over salad and serve immediately.
Substituting burrata for mozzarella gives it a creamier taste and texture.
This salad is best assembled just before serving as the arugula (arugula) will wilt.
