Roast deboned chicken stuffed with pork & sage recipe

I have developed a simple recipe for roast chicken on the bone stuffed with pork and sage. Laborie Earlier this year. They own a lovely farm grocery store that sells deboned free-range chicken. We also sell a variety of seasonal produce and artisan products from nearby farms. The chicken, pork, apple, sage, and onion fillings are juicy and delicious.

Stuffing and roasting deboned chicken is a lot of fun, and the layers of meat are easy to slice through. The light and dark meats of the chicken are evenly distributed throughout the roast, so each slice contains both.

The stuffing is the best part so I made a lot and had enough leftovers to make some meatballs. If you roast it, it won’t get a nice golden color and can be overcooked.

What do you serve the chicken with?

As with the roast chicken stuffing recipe, the best thing to serve here is roast potatoes.

Roasted pan juices make a delicious gravy. Simply strain them into a small jug to pour over the roast.

Make sure the roasting dish has sides and fits snugly. This will prevent the liquid from evaporating too much during cooking.Add a little water if the pan starts to dry out

1 deboned chicken

250ml strong chicken stock

100ml dry white wine (Laborie Sauvignon Blanc)

1 Dijon mustard heaping teaspoon

2 garlic cloves, crushed

3 bay leaves

3 a sprig of thyme


a pinch of olive oil or butter

1 a large white onion chopped very finely

1peeled and grated apple

68 A good quality pork sausage removed from the casing

¾ cup bread crumbs or crumbs

A handful of finely chopped parsley leaves

8Ten sage leaves, finely chopped

salt and pepper

Preheat oven to 180C / 350 F.

Heat the olive oil or butter in a nonstick skillet and sauté the onions until softened but not browned, about 4 minutes. Add apples and continue cooking for 1 more minute. Cool slightly.

Add the onion mixture to the bowl with the sausage meat, bread crumbs, chopped herbs and seasonings and mix well with your hands.

Stuff the ingredients into the deboned chicken and tie the string loosely around the chicken meat in 4-5 places. The chicken will look like a chunky log. The leash keeps everything in place. If the filling is too much, roll this into small meatballs, fry in a skillet until golden brown, and serve with chicken.

Place chicken filling snugly on high-sided roasting dish. Combine dashi stock, white wine, Dijon mustard, and garlic and drizzle over chicken. Add bay leaves and thyme to the dish and bake in the oven as follows.

Chest side up – 15 minutes

Flip bottom side up – 20 minutes

Place upright, breast-up, and flip until golden brown, about 20 minutes.

Grill the chicken each time you flip it, adding a little hot water to the tray when it’s dry.

Remove the chicken from the pan, add a little more hot water to the pan if necessary, scrape off the pan juices and heat through. This makes for a delicious gravy to serve with your chicken.

The stuffed chicken can be sliced ​​and sliced ​​and served with green vegetables and roasted potatoes or your favorite roasted new potatoes.
