- Pork chop: This recipe uses 3/4-inch bone-in pork chops. Available from the meat section of the grocery store. You can also use boneless pork chops if you like.
- Fresh cream and soup: These form the base of the gravy. I use pork bone broth, but you can substitute chicken broth. You can use a little sour cream instead of heavy cream.
- spices: smoked paprika, cayenne pepper, black pepper, cuminand salt.
- Aromatic: Add more flavor with garlic and onions!
- parsley or coriander: For garnish.
- Olive Oil: Fry onions and garlic. Butter can be substituted.

🔪 how to make a recipe
- Chop the onion and garlic and set aside. In a small bowl, combine salt, black pepper, and smoked paprika. Rub both sides of pork chops with salt and pepper.
- Put the Instant Pot on sauté mode and add the olive oil. Add the pork chops to the Instant Pot and sear for about 2 minutes on each side.
- When the pork chops are browned, remove from the Instant Pot and set aside. Add minced garlic and onion and sauté until fragrant.
- Pour in the broth and use a wooden spoon to scrape any brown bits from the bottom of the pot. Not only does it add flavor, it also keeps it from burning out of your Instant Pot.
- Pour in the heavy cream and add the browned pork chops. Close the lid and put the Instant Pot on high pressure for 10 minutes. It takes about 10 minutes to come to pressure. After the timer runs out, wait for the Instant Pot to fully release on its own.
- Remove pork chops and set aside. Return the Instant Pot to sauté mode. Add cumin, cayenne (optional), and salt if desired. Pour gravy over pork chops and serve.

- When you pressure cook meat, releasing the pressure naturally allows the juices to sink into the meat without drying it out. Do not release the pressure on the pan too quickly. Pork chops can become dry and rubbery.
- I 6qt instant pot for this recipe. Depending on the size of your Instant Pot, you can add all the pork chops at once or in batches. But don’t overfill the pan.
- If the sauce is too thin, it can be boiled down a little more to remove excess moisture. No need to use thickeners.
- If the sauce is too thick, add more broth little by little until it reaches the desired consistency.
