Air fryer zucchini & cheese phyllo pies recipe

These air fryer zucchini and cheese phyllo pies are so delicious, golden and crunchy. It’s super easy to make in the air fryer and only takes 12 minutes to bake.The filling is packed with flavors of onion, garlic, lemon, parsley, oregano and dill.
The filling can be made in advance and chilled if desired. Saute the onions, garlic, herbs and zucchini, then add the eggs, cheese and yogurt. I used Kelly gold butter to polish the pastry.It’s so creamy and delicious. I love Kelly Gold Mature Irish Cheddar, so I added that to the filling as well.
Making these phyllo pies in an air fryer is super easy. My Instant Pot Vortex Air Fryer heats up in minutes, so I can get these pies out in under 15. Depending on the size of your air fryer, these must be done in batches. Be careful not to overfill the basket. The Vortex can easily bake 6-8 at a time.
How to make zucchini filo pie
Gently remove 2 sheets of phyllo pastry from the package. Cover the rest of the pastry with a clean, damp tea towel to prevent it from drying out, or roll it up and put it back in the package.
Separate a pastry sheet, brush lightly with melted butter, and place the unbrushed sheet on top.
Divide the pastry sheet lengthwise into 4 equal halves, or 5 equal halves if you want to make smaller pies.
Brush the strips with butter, leaving the bottom bits unbrushed from the filling.
Place the cheese and zucchini mixture (1 dessert spoon) on the bottom edge of each pastry and fold to form a triangle. It’s okay if it’s a little messy at this point.
Continue folding the parcel, working your way up the strip of pastry, maintaining a triangular shape. Repeat with the other sheet of pastry. The pie can be pre-made up to this stage and kept in the refrigerator until ready to air fry just before serving.
Lightly brush all sides of the triangular pie with melted butter before baking in the air fryer.

Can you freeze phyllo pie?
After you roll the phyllo pie, you can freeze it. Arrange on a flat tray, cover and freeze until firm. Once set, they can be placed in ziplock bags stacked together.
Remove from freezer and allow to thaw at room temperature before brushing with melted butter and air frying according to directions.

Grate 1 medium/large zucchini/zucchini (about half a cup). Squeeze out any liquid. It turns out that there are not too many zucchini. 2 tbs kelly gold butter
1 chopped onion
Four crushed garlic
approximately 4501 gram (1 pound) zucchini, trimmed and grated (shredded)
2 – 2/1/2 tbsp finely chopped Italian parsley (handful)
1 teaspoon dried dill (or use fresh dill) 2 teaspoons)
1 teaspoon dried oregano
pinch of chili flakes
100gms Kerrygold mature cheddar cheese, grated
1/3 cup (80ml) Greek yogurt
1 large free-range eggs
1 tablespoon fresh lemon juice
salt and pepper
8 sheet of phyllo pastry
approximately 1/4 cup Melted Kellygold butter for brushing the pastry
Sesame seeds for topping (optional)
Melt butter in a large nonstick pan and cook until softened, about 4 minutes.
Add the grated zucchini to the pan and sauté until softened, about 3 minutes. Add chopped parsley, dill, oregano, chill, salt and pepper.cool the mixture
Put the eggs and yogurt in a bowl, lightly loosen them, and add grated cheese.
Add the chilled zucchini mixture to the cheese and yogurt mixture and chill in the refrigerator for about 1 hour. You can create this in advance.
