- cook pasta – Cook the pasta in a large pot according to the directions on the box. Add salt to taste, drain and set aside.
- chicken seasoning – Place the chicken thighs in a medium bowl and season the chicken liberally with salt and jerk seasoning so that the spices cover all sides of the chicken. (photo1)
- Marinade – Cover the chicken with clear plastic wrap and marinate for about 30 minutes or up to 24 hours.
- grill the chicken Heat a heavy cast-iron skillet over medium-high heat. When the frying pan is hot, add the olive oil. Using tongs, add chicken and cook until golden brown on both sides, or until fully cooked and juices from chicken run clear, about 7 to 10 minutes per side, depending on thickness of chicken breast.
