  • Roux – Pour the oil out of the pan and clean the pan if necessary. Then add about 3 tablespoons of oil back to the skillet. Whisk in remaining ¼ cup of flour. Continue whisking until the flour is completely mixed with the oil and cook until the flour tastes off, about 1 minute. (Photo 8)
