What you need for your recipe.

  • tofu – 1 block of firm tofu (tofu that is too firm or not firm is fine) works best for this recipe. It can hold its shape well, but not too stiff.
  • seaweed sheet – These seaweed sheets are now widely available at most grocery stores or on Amazon. All you need to do is blitz them in a blender or spice grinder until you get a powder.
  • vegan fish sauce or soy sauce – You want your tofu to burst with umami, so a vegan fish sauce or soy sauce works well.
  • bread crumbs – These tend to give bigger, crisper results and are easier to find vegan-friendly than commercial bread crumbs.
  • spices – You can use any seasoning you want, but as a certified Ghanaian lady, I go for Grains of Paradise, Anise Seed, Uziza Seed (Ashanti Pepper), Salt, Black Pepper and Coriander Seeds for a burst of flavor.   4. I don’t have whole spices, can I use the powdered version? That’s welcome, but powdered spices are more concentrated and don’t have the same texture feel as whole spices.

  • 1 piece firm tofu
  • 1 tsp vegan fish sauce or soy sauce
  • 1 sheet of powdered seaweed
  • 1/2 cup bread crumbs
  • 1/2 teaspoon coriander seeds
  • 1/4 teaspoon grains of paradise
  • 1/2 teaspoon maggot seeds
  • 1/4 teaspoon black or pink peppercorns
  • 1/2 teaspoon aniseed
  • 1/4 teaspoon flaky sea salt
  • 1/2 cup plant-based milk
  • 1/2 cup flour



Thinly slice the tofu and marinate in fish sauce and seaweed powder for 1 hour.


Prepare for the breading process as the tofu is marinated. Coarsely mash the whole spices with a mortar and pestle and mix with the bread crumbs and salt.


Sprinkle tofu evenly with flour, soak in vegetable milk, and coat with bread crumbs. Repeat this step until all the tofu is set.


Place in fryer and sprinkle with oil


Air fry at 375°F for 25 minutes, flipping halfway through.
