The traditional way to cook this recipe is over an open fire in an outdoor kitchen. This recipe is usually best done on a wood-burning grill, charcoal grillor both.

Roasting the meat over a blazing barbecue gives it a delicious smokiness and luscious aroma. However, if neither exists, electric bbq grill would be enough.

  1. Wash and drain the goat meat. Cut them into smaller bite size pieces.
  2. Pour oil and spices into a mixing bowl and mix.
  3. Coarsely blend the onion and garlic in a food processor or mince if desired.
  4. Place the meat chunks in a mixing bowl, add the spices, blended garlic and onion, and mix everything well.
  5. Marinate in refrigerator for 2 hours or longer. I like to marinate overnight.
  6. Remove from refrigerator and bring to room temperature.
  7. Set the grill to medium-low heat and place the meat on the grill.
  8. Add 2 tablespoons of salt to 2 cups of water.
  9. Grill meat for 50 minutes, turning over and dabbing with salted water every 10 minutes.

🥫 Storing and Reheating

Nyama Choma leftovers can be stored in the refrigerator. Refrigerate in an airtight container or resealable bag. This way it will stay fresh for several days.

To keep them longer, you can freeze them. To do this, spread the pieces of meat on a baking sheet and freeze for 1-2 hours. Then transfer to an airtight container or freezer bag and place in the freezer.

To thaw frozen nyama choma, place it in the refrigerator overnight. It can then be reheated in the microwave or pan.

  • Nyama choma is usually cooked with just salt and pepper. Still, I like to switch it up and use my favorite spices in recipes.
  • If you don’t have time to marinate for a long time, try infusing the meat with the marinade or make a cut with a sharp knife and rub the spices into it.
  • A variety of meats can be used in this recipe, such as goat ribs, spare ribs, or goat leg. However, it is not necessary to use red meat. Try it with white meat if you like.
  • We recommend removing the marinated Prime Kenyan Steak at least 1 hour before grilling and allowing it to come to room temperature.
  • After grilling, cover the meat with foil and let it sit for 10-20 minutes. This gives the meat time to absorb the juices and remain juicy.

Traditionally, this meat delicacy is usually served with kachumbari salad, a salad of fresh vegetables. However, Nyama choma is so versatile that you can eat almost anything you choose.

It’s good to eat with rice, but I’m on a sugar limit, so I eat it with cauliflower rice. Of course, you can eat it as it is, or you can mix it with grilled or steamed vegetables.
