I took my favorite hummingbird cake recipe and turned it into a hummingbird sheet cake. Topped with rich cream cheese icing, this is pure heaven.
What is Hummingbird Cake?
Pineapple and banana make up the dominant flavor profile of Hummingbird Cake. This is what happens when a baby is born on banana bread and carrot cake. Although it is moist, it has a fluffy texture and a fruity taste.
The origin of the hummingbird cake is said to have come from Mrs. Wiggins submitting it. Southern living 1978 magazine. It became an instant favorite.
So many people have said that this particular recipe is their favorite cake of all time.It is definitely one of my best cake recipes.
What size pan does the hummingbird sheet cake require?
I love making traditional two-layer cakes, but sheet cakes are much easier to share with a group of people. This is party food at its best.
I used a nonstick KitchenAid sheet pan that measures 23cm x 33cm x 5cm.For Americans, this is 9″ x 13″ x 2″.
The bottom of the pan should be lined only on one side. To do this, cut only one strip. The unlined sides were lightly sprayed with cooking spray. Once baked anyway, the cake will pull away from the sides.
What cream cheese do you need?
I love president cheese, is a global brand founded in France in 1968. Their Creams I was thrilled when he asked me to make some recipes using their range of cheeses. They expanded this recently and I tasted them all so I give them a full thumbs up.
This recipe uses rich and smooth plain cream cheese. When that’s the main ingredient in this frosting, you really want the best.
Some tips on how to make a hummingbird cake:
I prefer to use canned pineapple for this recipe, but you can also use fresh. Finely chop the pineapple so it doesn’t sink to the bottom of the cake.
Make sure the bananas are ripe. This affects sweetness and crumbleability.
For this recipe, I used walnuts in the recipe and garnished the sheet cake with pecan nuts. This was all I had on hand. It doesn’t matter which one, but I prefer raw walnuts.

Four large free range eggs
210gms or 1 1/2 cups white sugar or light brown sugar
250milliliters or 1 cup of sunflower oil
280gms or 2 cups cake flour
1/2 teaspoon salt
2 teaspoons Baking powder
1 teaspoon baking soda / baking soda
1 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon nutmeg
450gms (drained weight) or 2 cups pineapple (canned or fresh), finely chopped
350–360gms or 1/1/2 cup roughly mashed bananas (about medium)
3/4 chopped walnut cup
Cream cheese icing:
100gms butter (room temperature)
140gms president rich and smooth plain cream cheese
450gm or 3 cups powdered sugar
2 teaspoons lemon juice
extra chopped walnuts or pecans for garnish
Preheat oven to 180 C /350 F and line up 1 large rectangular cake pan – 23cm x 33cm x 5cm (pinch x 13″ x 2″)
Using an electric mixer, whisk the eggs and sugar until light and fluffy (about 4 minutes). Add oil and continue to whisk.
Sift flour, salt, baking powder, baking soda, add spices, mix and remove from mixer.
Add chopped fruit and nuts, pour the batter into a cake tin and bake until golden brown, about 40-50 minutes. Insert a sharp knife in the middle to clean it.Cover the cake loosely with tin foil and cover half with tin foil to prevent over browning
Let the cake cool on a rack before removing from the mold and icing.
To make the cream cheese frosting/icing, use an electric mixer to mix all ingredients until light and fluffy, then ice the chilled cake. Scatter on top to decorate.
If you want this to be a 2-tier round cake, bake it in two 2x23cm loose-bottomed round cake pans for about an hour.
