  • Chicken stock and water: I really like to use both, so I can better control the final flavor and taste it exactly as I want with different spice combinations. You can only use water, but you need to use more spices. Homemade bone broth can also be used for more nutrients.
  • Coconut amino: My less secret ingredient that adds a lot of pizza to this soup! How to make shirataki noodles

The first step is to prepare the noodles before cooking.

These low carb noodles are soaked in a fishy liquid that seems to turn off many. However, there is an easy way to prepare this and get rid of the fishy odor.

First, put the noodles in a colander and rinse them with running water. The noodles are very long, so get the scissors and chop them a few times quickly to make them easy to handle. Then I throw it as it rinses for about a minute or two.

How to make this keto chicken soup recipe

Here are the steps to make this low-carb chicken noodle soup:

  1. Chop the vegetables, wash the chicken and place it in a colander to dry.
  2. Press the saute mode of the instant pot and keep the cover open.
  3. Add olive oil and chopped onions and garlic when hot for about 1 minute.
  4. Add celery and stir for a few more minutes until tender.
  5. Add chicken thighs, water, chicken stock and spices.
  6. Switch the instant pot to manual mode and cook at high pressure for 20 minutes.
  7. Switch the valve to the vent position and perform a quick release. Doing this will stop the high pressure cooking process because you don’t want to overcook the chicken.
  8. Take out the chicken, chop it into small pieces, and put it back.
  9. Add coconut amino, taste salt and adjust spices as needed.
  10. Switch the instant pot to saute mode and add shirataki noodles.
  11. Boil for about 5 minutes and decorate with parsley.
  12. Your keto soup recipe is ready to eat!

Other ways to cook this soup

If you don’t have an instant pot, you can make this homemade soup in a stove or clock pot / slow cooker.

On the stove: Follow the same steps as above, except that the chicken is cooked for 45 minutes. Cook the soup over medium heat.

Clockpot / Slow Cooker: Follow the same procedure as above, except that the chicken is cooked on low heat for about 6-8 hours.
