What is Shirataki?

Shirataki is a long white noodle made from konjac root. They are very low in calories and carbohydrates, making them a popular alternative to low-carb noodles. Since it contains a lot of dietary fiber, it is also ideal for weight loss, and you will be full as soon as you eat it.

“Shirataki” is actually an abbreviation for “white waterfall” in Japanese, and represents its appearance. These noodles are also known as miracle noodles, skinny noodles, or konjac pasta.

  • Shirataki: I use 2 packs Shirataki Angel Hair A variety with long and thin strands.
  • Chicken thigh: For this recipe, I chose chicken thighs instead of chicken breasts. This is to add a deeper flavor and richness to the soup. Thick meat, like chicken thigh, has a meaty taste and a tender texture that makes all the differences in this recipe. You can also use leftover rotisserie chicken.
  • Chicken stock and water: I really like to use both, so I can better control the final flavor and taste it exactly as I want with different spice combinations. You can only use water, but you need to use more spices. Homemade bone broth can also be used for more nutrients.
  • Coconut amino: My less secret ingredient that adds a lot of pizza to this soup! A gluten-free alternative to soy sauce that is ideal for low-carb diets.I like to switch things Ground clay fishThis is an African spice available only from African stores here in the US or Amazon. Coconut amino The taste is similar and the umami is very attractive.
  • Olive oil: A mild flavor of oil can be used as a substitute.
  • vegetable: Decorate with onions, garlic, celery and parsley. I omitted the carrots because I wanted to keep this recipe as low in carbs as possible, but I can add more if needed.
  • spices: I use Smoked paprika pepper, Black pepper, time, Bouillon powder, cayenne pepper, And salt. Smoked paprika pepper is mild, but with a rich, smoky flavor, cayenne pepper is quite spicy. You can omit it if you don’t want the cayenne pepper to be spicy, but smoked paprika is essential for this recipe. You can also add some of your favorite spices.

How to make shirataki noodles

The first step is to prepare the noodles before cooking.

These low carb noodles are soaked in a fishy liquid that seems to turn off many. However, there is an easy way to prepare this and get rid of the fishy odor.

First, put the noodles in a colander and rinse them with running water. The noodles are very long, so get the scissors and chop them a few times quickly to make them easy to handle. Then I throw it as it rinses for about a minute or two.
