The Vegan Nigerian: 10 Light Nigerian Meals for Lunch and Dinner

Summer is really in us. This post shares a selection of Nigerian dishes that are light, healthy, delicious and perfect for hot climates. 1. Garau Garau
A delicacy of Hausa, also known as Shinka Fada Wake. Add special fresh toppings and suya spices to beans and rice. It may look simple, but it’s full of flavor.
2. Boiled plantain and egg
A lighter way to enjoy both Obako and Egusi. Choose boiled or steamed plantain instead of adding pound yam or eva to the egg. The delicate and melty texture of plantain complements the nut spinach and melon seed sauce.
3. Mushroom pepper soup
You may want to soften the spice or accept it altogether. In any case, pepper soup is a light and aromatic soup spiced with traditional ingredients. Choose mushrooms for this classic delicate take.
4. Dan Wake
A light Hausa dish consisting of azuki beans dressed in fresh vegetables, cassava flour dumplings, and special Souya spices. It only takes a few minutes to make, so you can spend less time cooking and more time in the sun.
5. Moin moin and soaked gari
Moin moin is a flavorful steamed bean pudding that can be eaten alone or in combination with a variety of other dishes. The light and refreshing combo, along with the ice-cold gari, will be appreciated later!
6. Boiled yam and scrambled eggs
It is a mixture of fluffy boiled yam and vegetable tofu, and it fills up in summer activities without feeling heavy. Add plenty of seasonal vegetables to your tofu to increase your vegetable intake.
7. Abachancha salad
This delicacy of Ivo, also known as African Salad, is made from fermented cassava and paired with Uguba (finely chopped oil bean seeds) in a palm oil-based sauce. For the lighter version, take the oil easily and don’t be afraid to add more crispy raw vegetables for a modern take that makes the salad bulky.
8. Vegetable fried rice
This classic rice dish is really perfect at any time of the year. In the summer, this side dish is perfect for picnics, potlucks and barbecues. Serve seasonal vegetables on rice for a bright and nutritious meal.
9. Eco and stew
Eco is a fermented corn pudding that can be chilled with a warm stew or sauce. It has a jelly-like texture and a slightly sour taste, and has a slightly acquired taste. But don’t let it put you off. Please give it a try and decide for yourself. I was skeptical at first, but now I don’t fully understand.
10. Gwate Acha
Digitaria porridge may sound heavy and chunky, but the beauty of this dish is that it can be lightened by adding vegetable soup without sacrificing flavor. .. This dish is a very nutritious staple from the median and northern parts of Nigeria. Besides phonio, fresh vegetables are used abundantly.
