Lemongrass coconut puff puff recipe

  • 2 cups of water
  • A handful of lemongrass
  • 1/2 cup of medium-strength flour
  • 1 teaspoon baking powder
  • 3 tablespoons of plain yogurt (light)
  • 1/4 cup of soaked lemongrass liquid
  • 2/3 cup powdered sugar
  • 3 tablespoons of granulated sugar
  • 2 tablespoons of dried coconut
  • Fried oil

Method

Put water and lemongrass in a pan, bring to a boil and set aside.

Mix flour, baking powder, yogurt and 1/4 cup lemongrass solution.

Heat the oil, keep it on low to medium heat, scoop a small bowl of mix and fry until golden.

Add the soaked lemongrass liquid, lemongrass, powdered sugar, and granulated sugar to the pan. If you have butter, you can add it at this stage.

Cook over low heat until thickened and syrup.

Sprinkle the mix on the puff puffs and the dried coconut on the puff puffs.

The remaining lemongrass syrup can be saved and used as a drink mix or pancake syrup.
