This vegan, yeast-free phonio bread is similar to corn bread in texture. It is light and has a nutty flavor and a rough texture. If you don’t mind this explanation, you will certainly like this recipe.
To make this bread, you need a phonio flour that can be made by blending / crushing phonio. I used a small smoothie blender and was happy with the result.Skip this step and simply Buy phonio powder..

-1 cup of phonio powder
-1 cup of home flour
-1 teaspoon salt
-Caster sugar 1/2 cup
-1 cup of vegan milk (soy, coconut, oat milk, etc.)
-1/3 cup sunflower oil
Method
Preheat the oven to 180 degrees Celsius.
Mix all ingredients in a large bowl and mix until the dough is thick.
Pour the batter into a can of lightly oiled bread or divide into lined / oiled square cupcake cases.
Place on the shelf in the middle of the oven and bake for 25 minutes. The toothpick stuck in the center of the bread should come out cleanly.
Transfer the bread to a wire rack and allow it to cool before serving. It’s delicious on its own, or tapped with salty vegan butter, or served with a delicious soup.
