5 Vegan Ice Cream Recipes to Keep You Cool During the Heatwave
Here in the UK, we are experiencing hot heat and the temperature is set to rise to 37 degrees Celsius next week. Pass the ice!
One of the best ways to stay cool is to indulge in cold drinks, light meals, and dairy-free treats. Nothing beats cold and fresh fruit (of course). I can imagine a lot of crunchy watermelons and juicy mango bowls in the coming weeks. Don’t start your obsession with icy oranges … but, of course, I’ll also reach for some hot-quenched plant-based ice cream.
Over the years, I’ve accumulated a lot of vegan ice cream recipes on my blog. Below are five of my favorites. I hope they inspire you. Enjoy the sun and be safe!
1. Cashew vanilla ice cream
Cashew nuts are a very versatile ingredient in vegan cuisine. Great for making creamy sauces, cheesecake fillings, plant-based cheeses, and in this case … delicious ice cream. This turned out to be incredibly good, so I’ll definitely remake it in the next few days.

Built on top of cashew-based ice cream, there is plenty of room to mix and match flavors. If you don’t mind the simple taste of matcha, mix it with powder. Top with plenty of dark chocolate chips for texture and luxury.

This is one of my favorite lovely cream recipes from my dairy-free ice cream E-book.. To handle this healthy ice cream, you need frozen bananas and a sweet and sticky date. Ideal for those who want to avoid refined sugar.
